Taxes, what a pain in the ...
Especially this year, with unemployment, contract employment, yada, yada...but they're done! YAY! And I still refuse to pay to send my taxes electronically, even if Tubby Tax will refund the Federal part. Hey, it makes it easier for the taxing authorities, why should I pay for their convenience?!
We made some really yummy mulled port wine jelly this past weekend. It isn't too bad in the WW points area (about 1.5 pts/T), and it is certainly yummy. We didn't bother with all the canning stuff, since we are consuming it right away. This means that we only cooked the wine a little bit, and so the jelly still has a bit of a kick. We used very expensive port, at least 10 bucks! :-) Instead of an orange, we used a tangelo from our tree.
It goes really great on the home-made bread, with some home-made honey-roasted peanut butter (only 3 pts/2T, much cheaper than Skippy). To make the peanut butter, just dump a can of honey roasted peanuts in the food processor, and grind until it looks like peanut butter. No added oil, sugar, or salt! Don't grind it too long, though, or it gets a bit soupy. Cashews work, too, but cashew butter is 5 pts/2T, so it is the same as Skippy in points, although more yummy. Oh, and to make the bread, just dump the ingredients into the bread machine. No, we're not going to start weaving our own tupperware containers, or start catching the squirrels and cooking them...
